Lightened-Up Broccoli Salad

I was recently thinking about how I needed to add more vegetables to our diet, an my mind went immediate to broccoli salad. I have made broccoli salad before but it has been a long time and I have no idea where the recipe was. Thankfully we have the internet and all you wonderful people our there who post all these delicious recipes! So Pinterest here I come! I found a delicious recipe and lightened it up. I used light Hellman's mayonnaise (Hellman's Mayonnaise is the best in my opinion)  2% cheddar cheese,  2 Tablespoons Splenda Brown Sugar instead of the white sugar, and I added the raisins as suggested in the recipe tip. In the comments below the original recipe,  someone had suggested that Sunflower seeds were good. I added those and it just makes it a little healthier and crunchier.

Lightened-Up Broccoli Salad

Broccoli Salad Dressing
1 cup Reduced Fat Hellman's Mayonnaise (Do Not use miracle whip)
4 Tablespoons White Sugar
3 Tablespoons white vinegar

Next combine the following ingredients in a large bowl

 5 cups chopped broccoli
1/2 medium red onion, chopped into small pieces
8 slices of cooked bacon, crumbled. (Not being to light here)
1 cup 2% grated low-fat cheddar cheese
1 cup broccoli slaw, chopped
1/2 cup raisins
1/4 cup salted sunflower seeds

Mix all of these ingredients together and pour dressing over the top and mix together.
Now you have a sweet and creamy Broccoli salad that had a perfect amount of crunchiness.

I have been on a decorating spree lately. I just finished my cabinets ( see them in this post here !) and so I've been changing things up a little bit. Thrifty Thursday-Marked Down Bread

Today I am sharing a tip that I use to stretch my meals out a little.  I buy marked down Italian bread loaves in the store bakeries.  I bought this loaf for $.72. It was only $1.00 to begin with but $0.28 is $0.28! Plus that's not the only savings you get with this. I love those boxes of frozen garlic toast that are about $3.00 for 6 slices!!! That's crazy. But sometimes, I just really want some bread with my meal. So I slice up the loaf and portion it out in 4 pieces per bag.  I then put all the individual bags in one big freezer bag and freeze. When it's time to eat, just pull out a bag. They thaw quickly. I spread softened butter on each side and sprinkle with garlic salt. I sprinkle with mozzarella cheese and sometimes I add Parmesan cheese. Bake at 375 for about 7 minutes or until they reach the desired crispness. With those other boxes coming in at about $0.50/slice, these are so much cheaper!!
