I am preparing for a dinner I am serving tomorrow to some guests. One thing I usually make is coleslaw. It is a nice alternative to salad since sometimes I just don't feel like dealing with all the different dressings and toppings. This recipe from Food Network is best made ahead. In fact, you HAVE to make it ahead. It's just gross if you don't!
I take a shortcut with this recipe.
I buy a bag of coleslaw mix, but since it is a little chunky for my taste, I quickly chop it up in the food processor until it's the size I want. This is personal preference, so you can do what you want.
And I really like this mayonnaise! I have found it at a local discount grocery store. It was only .99 for a medium size container.
Here is the recipe that I used from The Food Network.
6 cups shredded cabbage
1 cup shredded carrot (or substitute 1 bag of coleslaw mix)
1 cup mayo
1/4 cup vinegar
1 tsp celery seed
1/4 cup sugar
salt and pepper to taste
Combine all ingredients. Chill preferably overnight. Stir before serving.
Enjoy!
