Dig Deep Salad

Today, I am sharing one of my mom's recipes. It's for Dig Deep Salad which makes a great addition to any summer picnic. I had to make a few changes when I made it Saturday. My store didn't have any green peppers so I just added carrots for a different twist and some color. I think I actually liked it better with them! I also used a red onion instead of the usual yellow onion, mainly because I wanted some color.


This recipe needs to be made about a day ahead to let the flavors blend all together. You add the cheese and bacon bits right before serving. I forgot to take a picture after I added the cheese and bacon, but I'm sure you can imagine how delicious it looked after I did, right?

Dig Deep Salad (Also known as 7-layer salad)

  • 1/2 head lettuce, torn into bite size pieces
  • 1/2 bell pepper, chopped
  • 1/2 large sweet onion, chopped
  • 4 stalks celery, chopped
  • 10 ounces frozen peas, thawed
  • 1 pint Hellmann mayonnaise
  • 2 tablespoons sugar
  • 1/4 cup Parmesan cheese
  • 2 cups grated cheddar cheese
  • 3 ounces bacon bits

Put peas in colander, run cold water over, let thaw and drain. Layer 1/2 of each of the following, lettuce, pepper, onion, and peas. repeat with remaining vegetables. Mix mayonnaise and sugar, spread over top of the vegetables.Sprinkle with Parmesan cheese.Cover and let stand in the refrigerator 24 hours.Garnish with grated cheese and bacon bits.

Thrifty Thursday-Marked Down Bread

Today I am sharing a tip that I use to stretch my meals out a little.  I buy marked down Italian bread loaves in the store bakeries.  I bought this loaf for $.72. It was only $1.00 to begin with but $0.28 is $0.28! Plus that's not the only savings you get with this. I love those boxes of frozen garlic toast that are about $3.00 for 6 slices!!! That's crazy. But sometimes, I just really want some bread with my meal. So I slice up the loaf and portion it out in 4 pieces per bag.  I then put all the individual bags in one big freezer bag and freeze. When it's time to eat, just pull out a bag. They thaw quickly. I spread softened butter on each side and sprinkle with garlic salt. I sprinkle with mozzarella cheese and sometimes I add Parmesan cheese. Bake at 375 for about 7 minutes or until they reach the desired crispness. With those other boxes coming in at about $0.50/slice, these are so much cheaper!!
