Breakfast Burritos are a quick breakfast to make ahead and freeze. I usually only make about a week or two worth at a time. Then I freeze them. My husband normally takes these to work for his mid-morning break. I like to put them in the fridge the night before to thaw.
Breakfast Burritos
6 eggs
6 flour tortillas (taco size)
1/2 cup cooked and crumbled sausage
1 cup shredded cheddar cheese
2 slices pepper jack cheese, crumbled
Scramble and season the eggs as you normally cook them. Mix the sausage, eggs, and cheese together. Place a rounded 1/3 cup of the mixture in each tortilla and roll up burrito style. Wrap in paper towels, then place in a sandwich bag. Freeze.

I add a little red pepper flakes to my sausage when I cook it to make it a little spicy. You can customize these however you like to eat your breakfast eggs.
