Happy Memorial Day!

Hope everyone is having a great Memorial Day! We had a picnic today and plan on playing volleyball with some friends this evening. I hope that we all took time to remember our fallen heroes. I am forever grateful for what they have done and the sacrifice they made. And I'm blessed to live in this country!

Our picnic food was yummy and super easy. We had pork BBQ sandwiches, chips, watermelon and homemade chocolate chip cookies.


Yesterday, I put a pork loin in the crock pot on high for about 5 hours. I just put it in, pour one can of chicken broth in, sprinkle liberally with salt and pepper and your are done! I make gravy from the broth and shred the pork and serve it on top of mashed potatoes. It is one of my husband's favorite meals. I serve this pretty often since Kroger has these pork loins for about $1.88/pound pretty often. One loin gets at least two meals with my family, and if Im lucky and have a little leftover, I make soup or BBQ with it.



So today, I just took my leftover shredded pork from yesterday, heat it up and then add BBQ sauce to it.

I have been on a decorating spree lately. I just finished my cabinets ( see them in this post here !) and so I've been changing things up a little bit. Plus spring is almost here and so I've been getting my flowers out for it! I also love to see how inexpensively I can decorate while still looking nice. I love the stuff from Pottery Barn, Magnolia Market, etc. but here on THIS blog, I'm on a budget! My favorite stores are thrift stores, specifically the Goodwill or Goodwill Outlet and stores like Ross, Homegoods and Michaels. And of course, the Dollar Tree! Thrifty Thursday-Marked Down Bread

Today I am sharing a tip that I use to stretch my meals out a little.  I buy marked down Italian bread loaves in the store bakeries.  I bought this loaf for $.72. It was only $1.00 to begin with but $0.28 is $0.28! Plus that's not the only savings you get with this. I love those boxes of frozen garlic toast that are about $3.00 for 6 slices!!! That's crazy. But sometimes, I just really want some bread with my meal. So I slice up the loaf and portion it out in 4 pieces per bag.  I then put all the individual bags in one big freezer bag and freeze. When it's time to eat, just pull out a bag. They thaw quickly. I spread softened butter on each side and sprinkle with garlic salt. I sprinkle with mozzarella cheese and sometimes I add Parmesan cheese. Bake at 375 for about 7 minutes or until they reach the desired crispness. With those other boxes coming in at about $0.50/slice, these are so much cheaper!!
