I am really enjoying my garden. I had several potato plants and so I dug up some potatoes and roasted them for tonights supper. They turned out wonderful! The outside was browned and slightly crispy and the inside was soft and tender.
This recipe must be made using new potatoes or very small ones. The temperature is high but it is needed to get that beautiful outside. I peeled them but you could leave the skins on if you want. This recipe serves about 2.
Oven Roasted New Potatoes
8 new potatoes
1 Tablespoon of olive oil
1/4 tsp each or salt and pepper
1/8 tsp garlic powder
Optional 1/2 tsp dried parsley
Peel and cut potatoes so that they are all pretty uniform in size. Mix oil and spices together and gently toss with potatoes. Place on baking sheet sprayed with non stick spray. Cook on 450 for about 20 min. I finished by broiling them for 3-4 minutes to get them a little more brown.
