Bi-weekly Meal Plan 9/12 & Vacation Food on a Budget


I am so ready for fall! I've already decorated for fall and I'm planning on sharing some of those decorations with you all soon! I did everything on a major budget this year and I think it's cuter than ever. But for now, let's see what we've got planned to eat for the next two weeks! Our 7th wedding anniversary is this weekend and we are planning a short trip, So I planned on using up what I already had on hand for these weeks, so you will see a few repeats from last time! But I am also planning on making a meal or two while we are away, but more on that later.

1. Loaded Potato and Chicken Casserole (I never made this from last week!)
2. Chicken Quesadillas
3. Shredded Pork over mashed potatoes
4. BBQ Pork Sandwiches
5. White Beans with Ham and cornbread
6. Spicy Chicken Legs
7. Cheesy Noodles
8. Breakfast for Supper (Biscuits and Sausage Gravy)
9. Salisbury Steaks
10. Invited over to a friends house
11-14 Anniversary Trip

For our anniversary we are staying at a lodge resort in the mountains. They have a restaurant there but we will only be eating there for breakfast and lunch. Their supper menu was expensive and sounded pretty boring. Also, online reviews for breakfast and lunch were great but people said that supper was just ok. So, I am planning on taking a slow cooker! I did email them ahead of time to make sure this was ok, and it was. (I'm also saving this email in case I have problems later.) I'm taking a beef roast (that I got on sale for $2.99/lb) with potatoes and carrots to put in the slow cooker (using a slow cooker liner for a no-clean up meal!) and we will have that for supper one night and reheat leftovers for the next night. We have a mini fridge in our room and I will take the roast frozen and on ice so it should travel ok.

We are also taking charcoal and hot dogs and having a picnic one day (there are grills nearby to use).


I wanted an easy dessert that was special and I found that Wal-mart sold these cheesecakes in their freezer section.
They are $1.98 for two slices. I have tried the Turtle Cheesecake flavor before and it was delicious! I figured this would be the perfect easy dessert, plus it is something "special" since we don't have cheesecake that often.


We are also taking popcorn and drinks for the room. We are planning on doing a lot of relaxing and I can't wait!

I have been on a decorating spree lately. I just finished my cabinets ( see them in this post here !) and so I've been changing things up a little bit. Plus spring is almost here and so I've been getting my flowers out for it! I also love to see how inexpensively I can decorate while still looking nice. I love the stuff from Pottery Barn, Magnolia Market, etc. but here on THIS blog, I'm on a budget! My favorite stores are thrift stores, specifically the Goodwill or Goodwill Outlet and stores like Ross, Homegoods and Michaels. And of course, the Dollar Tree! Thrifty Thursday-Marked Down Bread

Today I am sharing a tip that I use to stretch my meals out a little.  I buy marked down Italian bread loaves in the store bakeries.  I bought this loaf for $.72. It was only $1.00 to begin with but $0.28 is $0.28! Plus that's not the only savings you get with this. I love those boxes of frozen garlic toast that are about $3.00 for 6 slices!!! That's crazy. But sometimes, I just really want some bread with my meal. So I slice up the loaf and portion it out in 4 pieces per bag.  I then put all the individual bags in one big freezer bag and freeze. When it's time to eat, just pull out a bag. They thaw quickly. I spread softened butter on each side and sprinkle with garlic salt. I sprinkle with mozzarella cheese and sometimes I add Parmesan cheese. Bake at 375 for about 7 minutes or until they reach the desired crispness. With those other boxes coming in at about $0.50/slice, these are so much cheaper!!
