I'm trying to create more low-carb lunch options for my two daughters and I. We eat so much bread and pasta and, well, CARBS.
So.
I've come up with a lettuce wrap that was so delicious and really simple and versatile. It was basically a salad all wrapped up, but the crispy lettuce really curbed a craving for a crunch of chips or something.
Anyway, try this recipe and let me know how you change it! I simply added things that I normally put on a salad.
Wash and dry iceberg lettuce. Tear into wrap size pieces.
I then chopped up grilled turkey, dried cranberries, carrots, cucumbers, tomatoes and topped it with just a little bit of ranch and cheddar cheese.
Some of my lettuce pieces were a little too small, so make sure you make them big enough to wrap around your filling.
I served these with Cuties and Pretzels for my girls. My 4 year old said they were delicious!
